So, it's been absolutely beautiful weather here the last few days. Yippee for the summer arriving at last. Although if, like me, you're British, I'm sure we'll be chatting about how variable the weather is until the cows come home.

But with the sun brings the need for ice cream and ice lollies. 

I included this recipe in this post a while back but thought I'd give it a post of it's own as I love it so much!

I don't know about you but I do love a good Magnum. But, for a start, I couldn't afford to buy as many as I would want to consume. I shouldn't eat that much processed sugar. And I sure as heck don't want to be feeding Ariana that much processed sugar.

Three Ingredients Ice Lolly: Quick, Easy, and Delicious. Not that she would pick a Magnum. Nope. She'd be munching on a rocket ice lolly. Or a unicorn ice lolly. Or any ice lolly that is remotely fun shaped and looks like it might glow in the dark given half the chance.

So I thought I'd try my hand at making my own ice lolly with only three ingredients.

I tried to make it as luminous as possible so Ariana would still want to eat it...

And it worked!!

The Three Ingredients:

  • 400g Frozen Fruit - I used summer berries but any frozen fruit is good.
  • 250g Natural Yoghurt - I used Yeo Valley because my Milk Man left me a free tub this very morning, what a happy coincidence.
  • 4 tbsp Maple Syrup - try to use pure Maple syrup because the taste is so much nicer than the mixes. 

Method:
Ok, so if you've read any of my previous recipes on this blog or my foodie blog you'll know I'm a bit slapdash with my methods. Mainly because I like to experiment. But also because I'm a very busy (read lazy) cook who needs to just be able to throw things together and be done. 
So I'll try to be as precise as I can!

  1. Start by defrosting your fruit. Try not to heat it up while you're doing this. So naturally is better than microwave if possible. 
  2. Once defrosted, pass the fruit through a sieve or muslin. If you're using larger fruit such as kiwi, mango, or pear, blitz it in the food processor first. But always pass through the mesh so you scoop out all the seeds and harder bits. (I save the mush and use it with yoghurt and granola for brekkies)
  3. Once you've got a bowl full of delicious fruit sauce add in the yoghurt and give it a good stir. 
  4. Next, add in the maple syrup. Now this is to taste really. Depending on what fruit you use and how sweet you like it. I had quite tangy fruit and have a very sweet tooth so I added 4 tablespoons. Maybe add a few at a time and taste test as you go? 
  5. Try not to eat the bowl of yumminess - very important step.
  6. Pour into ice lolly moulds and stick in the freezer for at least four hours.
  7. Tadaaah - Eat!

So simple, and so effective. 

I love making things, especially yummy tasting food, I find it really calming and good for my wellbeing as there is a process to follow and my creative brain can't go too haywire. 
Plus, there's (nearly) always something yummy to eat at the end.
